A lot of nights, especially after a good workout, I’m craving something hearty but I’m too tired to spend a bunch of time in the kitchen. Sometimes that’s hard with keto but this meal is just 5 net carbs, mostly from the peppers, and does the job nicely in under 20 minutes. Flap steaks are pretty inexpensive so this is a great value meal too. The steaks are quite thin so you can keep them in the freezer and thaw it on the counter easily.
Flap Steak with Avocado & Pepper
Yields 2 Servings
Quick, hearty and inexpensive steak with only 5 net carbs
Ingredients
- 2 1/2lb Marinated Flap Steaks
- 2 Bell peppers
- Cilantro
- 1 Avocado
- High temp oil like peanut or refine soy
Instructions
- Bring flap steaks to room temperature.
- Season both sides of each steak with salt and pepper.
- Slice bell peppers into rings.
- In very hot pan saute pepper rings. After peppers are blackened, about 5 min, add a small amount of water, season with cilantro, salt, pepper and cover. Cook until peppers are fork tender. About 6 min.
- Set peppers onto plates.
- Reuse pan, without cleaning. Bring to max heat and sear one side, then the other side of the steaks. 1-3 min per side. Check that middle of steak is 130F or higher to your preferred doneness.
- Place steak on peppers.
- Cube avocado, put avocado and cilatro on steak.
Notes
- The high temps that make this taste the best tend to make a lot of smoke.
- As always heating your plates in the oven is a good idea before placing hot food onto them and serving.
